Significant emphasis is placed on ingredients at the heart of a “pescatarian diet”, considered to be among the healthiest: a wide variety of fish, crustaceans and molluscs form the basis of our menu, served alongside plant-based ingredients grown, wherever possible, in our vegetable garden and greenhouses, and always chosen according to what’s in season.

We’ve selected more than 400 labels chosen as they adhere to the “well made” philosophy, with a focus on respect for the environment, in perfect Olio’s style. We’ve dedicated to our bottles a large modern refrigerated wine cellar which, like a bookcase, invites us to listen to delicious stories, dish after dish.
The fish that we serve raw, or that does not reach a core temperature of 60° C during cooking, is bought fresh and then blast chilled by us in accordance with current regulations (EC no. 853/04) to protect the health of our customers, and to best preserve its organoleptic properties. Shrimp, prawns, caramote prawns and other molluscs are blast chilled directly on board the fishing boats, to ensure that their quality is preserved.
All dishes on the menu are also available gluten free. Our staff are on hand to provide any clarification required.
